A washed peaberry coffee from smallholder farms along the Kuta Ridge in the Waghi Valley highlands of Papua New Guinea. Grown at 1550 meters in black volcanic soil, this lot features peaberries, a natural mutation where only one seed develops inside the coffee cherry, resulting in a smaller, rounder, and denser bean. The varieties include Arusha, Blue Mountain, Bourbon, and Typica. Processing takes place at Kuta Coffee Mill, a collaboration between the Ulga and Kolga tribes. The flavor profile features crisp red apple with subtle earthy nutmeg and rich molasses-like depth.
Jake, Joe, and Herb Brodsky founded Novo Coffee in Denver, Colorado in 2002, establishing a family owned operation in the RiNo/Five Points neighborhood that has now operated for over two decades. Their Loring roaster, powered by Ferrari motors, roasts fresh daily to order, ensuring customers receive beans at peak freshness. A relationship driven sourcing approach, summarized by their motto Get Closer, shapes how the roastery builds direct connections with coffee producers and customers alike. This philosophy of proximity and connection has become the foundation of their reputation within Denvers vibrant coffee community.
