This coffee is from La Divina Providencia farm in El Salvador, located in the Apaneca Ilamatepec mountain range on the volcanic slopes of Santa Ana at 1700 meters altitude. Produced by Roberto Ulloa, a fifth generation coffee farmer, the lot features SL28 variety and is natural processed, dried directly on raised beds for 30 days. The flavor profile includes bright red berry notes from the varietal, followed by sweet brown sugar and tropical fruit enhanced by the natural processing method.
Founded in Aarhus in 2012 and beginning roasting in 2013, La Cabra has grown from a small shop far from the city center into a globally recognized coffee company with locations in Copenhagen, New York, Bangkok, and Oman. Their novel single roast philosophy means each coffee gets one carefully chosen profile that best showcases its unique character, an approach that has led to transparent and memorable coffee experiences. They roast lighter to emphasize origin specific flavors and currently serve subscribers in over 60 countries. The roastery's new Copenhagen Nordhavn facility combines industrial heritage with modern production.
