Yellowbird Coffee is a specialty roaster in Copenhagen, Denmark, roasting twice weekly on a Giesen W15A they call the Baroness. The roastery favors light to medium profiles that highlight origin characteristics, approaching each coffee as an expression of the farmer's work and the land it grew on.
