This coffee is a Sidra variety grown by Jairo Arcila at Finca Santa Mónica in Colombia at 1450-1500 meters altitude. Sidra is a Bourbon-Typica hybrid originally from Ecuador, known for high yields, vibrant sweetness, and climate resilience. The beans are selectively hand-picked at peak ripeness, carefully sorted, and dried on raised beds under controlled conditions. This natural processed coffee offers tasting notes of Cointreau, Christmas cake, and dark chocolate.

Ben Stokes founded Colours Coffee from Hullavington in Wiltshire after apprenticing under UK Barista Champion Maxwell Colonna at Colonna and Smalls in Bath. Over several years there he honed his skills in espresso preparation and brew methods before his focus gradually shifted toward roasting. A trip to Colombian coffee farms deepened his understanding of the full bean to cup journey. The roastery uses a colour coding system to categorize its single origin offerings, making the range more navigable for customers who might find specialty coffee terminology intimidating. Current offerings include anaerobic processed beans from Colombia's Finca Chorro Alto, washed El Salvador, and natural Burundi. The venture shares space and community with the nearby Flying Monk Brewery.
