This coffee is from Region Tarrazú, Costa Rica, produced by various smallholders and processed at the Beneficio San Diego Mill. It is grown at altitudes between 1450-1750 meters. The coffee undergoes lactic anaerobic fermentation, a semi-washed process pioneered in Costa Rica that transforms sugars into lactic acid for enhanced sweetness and unique flavors. The varieties are Caturra and Catuai. The flavor profile features fig, yogurt, and cashew notes with a slight tanginess.
Pair Cupworks is a specialty micro roastery in Mesa, Arizona, founded by Kimhak Em and Eugenia Tai.
