About This Coffee

Las Lajas is a natural process coffee from Sabanilla de Alajuela in Costa Rica's Central Valley, grown at 1400–1600 MASL. Produced by the Chacón family at their micromill using the Catuai variety, this coffee undergoes a proprietary Alma Negra natural processing method. Ripe cherries are classified and dried on raised beds for at least a week with multiple daily turnings, then finished in a greenhouse patio with alternating sun and mound storage until completely dry. Tasting notes include fruit cocktail, white sugar, and nutmeg.

Night Swim Coffee was established in Charlotte, North Carolina in 2021 through the merger of two pioneering operations: Not Just Coffee, founded in 2011 by James and Miracle Yoder, and Undercurrent Coffee, founded in 2018 by Todd and Erin Huber. United under Black Rock Hospitality, the combined entity operates 15 kilogram and 35 kilogram Loring Falcon and Kestrel roasters that enable precision roasting across multiple coffee concepts. Direct relationships with producers ground their sourcing philosophy, while partnerships with local Charlotte composting companies reflect their commitment to environmental stewardship. Multiple cafes across the portfolio serve as gathering spaces where coffee quality and community connection intertwine.
