About This Coffee

Las Lajas Perla Negra is a natural process coffee from Sabanilla de Alajuela in Costa Rica's Central Valley, grown at 1400–1600 meters altitude. The blend consists of Catuai and Caturra varieties. The Perla Negra processing involves spreading ripe, high-brix cherries on raised beds in thin layers, followed by a week of sun exposure, shade rest, and greenhouse dehydration with twice-daily turning for exceptionally slow drying. The coffee offers blackberry, cranberry sauce, and molasses notes.

Night Swim Coffee was established in Charlotte, North Carolina in 2021 through the merger of two pioneering operations: Not Just Coffee, founded in 2011 by James and Miracle Yoder, and Undercurrent Coffee, founded in 2018 by Todd and Erin Huber. United under Black Rock Hospitality, the combined entity operates 15 kilogram and 35 kilogram Loring Falcon and Kestrel roasters that enable precision roasting across multiple coffee concepts. Direct relationships with producers ground their sourcing philosophy, while partnerships with local Charlotte composting companies reflect their commitment to environmental stewardship. Multiple cafes across the portfolio serve as gathering spaces where coffee quality and community connection intertwine.
