This coffee is a Pacamara varietal from Jinotega, Nicaragua. Produced by the Las Nubes Community farmers including Ada Oneida Montenegro, Henry Zeledon, and Jonhy Montenegro, this washed process coffee offers a distinctive cup profile with notes of apple, peach, and honey. The Pacamara varietal is a cross mutation of Pacas and Maragogype, known for its large bean size and high quality cup profile.
Will founded River Coffee Roasters in Winchester, Hampshire, in 2018. The roastery follows a direct trade model, paying above Fairtrade rates and making regular visits to producers in Colombia and Costa Rica, including Tarrazú experimental microlots and farms in Huila.
