This washed Colombian coffee is from Liliana Ramirez at Finca El Yolombo in Anzá, Antioquia, grown at 1,850 meters elevation. The Chiroso variety is processed using the traditional "3 Cochadas" method, where cherries harvested over three consecutive days are floated, pulped daily, then fully washed together, creating a blend of 3-day, 2-day, and 1-day fermentations. The coffee displays key lime, grapefruit, and juniper notes with bright acidity and smooth, velvety body.

What began as Ming's personal coffee project within Tesla's internal coffee club evolved into a full roastery operation after both founders chose to leave their tech careers to pursue coffee full time between 2023 and 2024. Moonwake represents a growing movement of technologists who discovered that coffee roasting offers greater fulfillment than their previous careers, channeling engineering precision into specialty coffee.
