About This Coffee

This coffee is a honey processed Milenio variety produced by the Salazar family on their Los Cipreses farm in Naranjo, West Valley, Costa Rica at 1,650 meters altitude. Milenio is a first-generation hybrid variety, a cross between T5296 and Ethiopian Sudan Rume, developed for specialty coffee quality and disease resistance. The coffee underwent a modern honey process where cherries are depulped leaving all possible mucilage on the beans, then dried for approximately 25 days in African beds to allow aerobic fermentation. The cup profile features bright and smooth structure with notes of sweet green apples, mature cherries, smooth nougat, intense red berry aromatics, and a long sparkling finish.
