This anaerobic natural processed decaf comes from the renowned El Vergel estate in Colombia's Tolima region. Produced by brothers Elias and Shady Bayter, this coffee undergoes controlled anaerobic fermentation before EA decaffeination. The coffee undergoes 48-60 hour anaerobic fermentation with controlled pH levels, followed by careful drying and a 45-day chilling period to enhance complexity before EA decaffeination. It delivers notes of red apple, fudge, and yellow plum.
