Huai Chompu coffee from the Akha Hilltribe community in Chiang Rai's "Pink Valley," Thailand, grown at 1,250–1,450 meters by smallholder farmers. Features Chiang Mai and Catuai cultivars, with Chiang Mai being a rust-resistant hybrid developed to improve cup quality and farming resilience. Processed anaerobically — fermented for 6 days in plastic bags, then slow-dried on raised beds. Described as complex and vibrant, enhanced by innovative fermentation and drying techniques.
