About This Coffee

A coffee from Aldama, Chiapas, Mexico, sourced from 120 producers in Cotzilnam and six nearby communities through the Beneficio Comunitario San Pedro cooperative, established in 2018. Grown at 1,455 meters above sea level using mostly organic or low-intervention practices. The blend of Typica, Bourbon, and Caturra varieties underwent honey processing with 25 hours of fermentation before pulping in hermetic bags (averaging 17 Brix), then sun-dried on raised beds for 12 days and rested in shade for 17 days. Flavor notes include bright citrus, honey, mandarin, red apple, apricot, chocolate, and juicy character.
