The traditional washed process involves handpicking ripe cherries, manual depulping, fermentation in cement tanks or plastic tubs, washing with spring or river water, and sun-drying on patios for approximately fifteen days. Flavor notes include red berry, nuts, toffee, chocolate, and dark caramel, with medium sweetness and medium body.
