This coffee is produced by El Arroyon, located in San Martin, Chiapas, Mexico. Founded in 2003, the cooperative has grown to 30 producers, half of whom are women, primarily from indigenous Katchikeles and Mocho communities. The coffee is the Maragogype variety — a natural mutation of Typica known for its extra-large beans — grown under the shade of local Oyamel trees. All coffee is sun-dried and depulped individually by each producer. Clean and balanced with a pleasant body and low acidity, with notes of cane sugar and a hint of citrus. Works well with milk.
