This coffee is from Finca San Juan del Vesubio farm in the Yajalon region of Chiapas, Mexico, owned and operated by Elvira Trejo. The farm is located in a cloud forest at an altitude of 1,500-1,800 meters above sea level. This is a Bourbon variety coffee that is washed processed. The coffee has won many awards in Cup of Excellence and other Mexican quality competitions since 2014. The farm consists of 66 hectares with a diversity of flora and fauna, and the family is committed to environmental preservation. This is a light roast (Agtron 99) with tasting notes of cacao, toasted sugarcane, and raisin. Harvest occurs in March, and the farm uses artisan harvesting of homogeneous ripe cherries, pulping without water, and drying on perforated raised beds.
Wasatch Roasting Company was founded in 2016 by Darren and Tonya Blackford after a trip to Costa Rica sparked their fascination with small scale coffee roasting. What started with a tabletop roaster has grown into an in house roasting operation in downtown Ogden, Utah, where the Blackfords roast specialty grade beans in small batches. Wasatch also doubles as a community gathering space, featuring rotating gallery exhibitions and work by local artists and artisans throughout the shop.
