Produced by Cooperativas Asociadas Café la Tribu, a network of 4 cooperatives representing 827 producers (45% women) across 6 municipalities. The coffee features Bourbon, Typica, and Caturra varieties, processed using the washed method. Cultivated organically under diversified shade within the buffer zone of El Triunfo Biosphere Reserve, an important habitat for the quetzal bird and other wildlife. The coffee is naturally sun-dried and has a cupping score of 84. Flavor notes include orange, butter, and nougat.
Animal Coffee started as a small specialty coffee space in Barcelona's Sarria neighbourhood in 2015 and began roasting its own beans the following year. They work exclusively with 100% Arabica, using a light roasting approach adapted to each origin to draw out its characteristic notes. Roasting happens weekly to keep deliveries as fresh as possible. Beyond the roastery, they run a barista training centre offering courses from beginner to advanced levels, as well as consultancy for businesses setting up coffee operations. They supply roasted beans to offices and private customers across Spain.
