A filter coffee from Ixhuatlán del Café, Veracruz, Mexico, sourced from approximately 220 smallholder farms at 1,400–1,500 meters altitude. Produced under the Santuario project, which has been operating in Mexico since 2017 and established a dedicated processing center in Ixhuatlán in 2019. The coffee is a Red Bourbon variety, processed using a natural anaerobic method with 31 hours of fermentation. Flavor notes include cherry, apricot, and white chocolate praline.
