About This Coffee

This micro-lot comes directly from the family farm Concepción Buena Vista, located in San Martín Jilotepeque, Chimaltenango, Guatemala. It is a Red Bourbon variety that underwent an anaerobic (lactic) process in an oxygen-purged tank under controlled conditions, then was dried naturally in a greenhouse. 12 Onzas

12 Onzas is a specialty coffee roastery based in Guatemala City, founded by David Solano, his wife Atenea Kaire, and his brother Eddie. The company represents the fourth generation of the Solano family's coffee farming legacy, operating from their ancestral farm Concepcion Buena Vista in Chimaltenango, which has been in production for over a century. David Solano, a three time Guatemalan Barista Champion, envisioned 12 Onzas as a platform to bring premium Guatemalan coffees to local consumers who traditionally had access only to mass produced alternatives. Their philosophy emphasizes experimental processing methods and direct sourcing from their family farm, and through their work 12 Onzas has become instrumental in establishing Guatemala's vibrant specialty coffee scene.
