This coffee is a Colombian single origin developed exclusively with Cata Export and Diego Bermudez. It is made from Castillo variety cherries that underwent anaerobic fermentation for 48 hours at 20°C, followed by thermic shock washing. The beans were then dried under controlled conditions for 34 hours at 35°C with 25% relative humidity until reaching 10-11% moisture content.
