Moon Gesha is a Bronze-Tip Gesha variety from El Vergel Estate in Colombia. This microlot undergoes an experimental two-step fermentation: 48 hours of anaerobic fermentation in sealed, submerged bags followed by 96 hours of carbonic maceration in CO2-filled barrels. The cherries are selected at optimal maturation and dried in a temperature-controlled environment. Known for complex, winey, red fruit tasting notes with bright and crisp characteristics.
