About This Coffee

This coffee is a Mosto Anoxic Washed Chandragiri variety from Ratnagiri Estate in Chikmagalur, southern India. Produced by Ashok Patre at Ratnagiri Estate, this is a high-intervention coffee using innovative processing techniques. The cherries are fermented for 48 hours, then undergo vacuum impregnation with coffee fruit mosto before being demucilaginated and fermented for 36 hours in an anoxic environment. The coffee is then slow-dried for 14 days. This experimental process results in a coffee with moderate-to-high acidity and fruitiness, featuring blackberry and pear flavor notes. Species is Arabica.

Siblings Mark and Hannah Al Shemmeri founded Dialect Coffee in 2022, setting up a small 1 kilogram sample roaster on a table at Attic Brew Co's taproom in Stirchley, Birmingham. Mark brings an Engineering Doctorate from the University of Birmingham's School of Chemical Engineering, where his research focused on heat and mass transfer in coffee roasting, sponsored by Jacobs Douwe Egberts. After a period as roasting nomads, partnering with established roasteries including Hasbean and The Coffee Wizards during quiet hours, the operation is now based in the Netherlands, roasting at partner facilities while maintaining its agile, nomadic model. Dialect specializes in single origin, single farmer lot coffees with experimental processing techniques including anaerobic fermentation, carbonic maceration, and thermal shock treatment.
