About This Coffee

Mr. Toi's Winey Honey is a Fine Robusta (Robusta 138 / Coffea canephora) grown on the Future Coffee Farm in Bảo Lộc, Vietnam, at 900–1,000 meters above sea level. Harvested November 2024–January 2025, it undergoes a 72-hour anaerobic fermentation in stainless steel tanks followed by honey processing with ~70% mucilage retained and greenhouse drying over 15 days. The cup is described as intensely fruity and complex, with primary notes of red wine, gingerbread, and almond, and secondary notes of rhubarb, blueberry, and cinnamon.

Franz Morish Kaffeerösterei opened in 2015 in Leipzig, near the Grassi Museum, establishing itself as one of the city's few roasters with a fully visible in house roasting operation. Their approach to espresso involves slightly higher final temperatures and longer roast times to reduce acidity and build body, while filter coffees are roasted faster to preserve bright, fruity flavors. This dual methodology reflects a thoughtful understanding of how different brewing methods demand different things from the bean. They source specialty grade green coffee from origins including Colombia's Huila region, Brazil, India, and Congo, offering both single origins and omni roasts.
