This coffee comes from La Bastilla Coffee Estates in the Jinotega region of Nicaragua, grown between 1300 and 1500 meters above sea level. Made from the Geisha variety, this lot undergoes a natural anaerobic process in which whole cherries are fermented in temperature-controlled, sealed tanks before drying. The controlled fermentation enhances tropical fruit expression while preserving clarity in the cup. Expect ripe mango and papaya up front, layered with honeyed sweetness and a refined green tea finish.
