This coffee is from Finca Los Placeres in the Matagalpa region of Nicaragua, produced by the Mierisch family. It is the only Rainforest Alliance-certified plantation in their portfolio, with approximately 28 hectares preserved as untouched wild forest. The lot is Ethiosar, a complex hybrid variety developed from Sudan Rume crossed with Sarchimor and re-crossed with Villa Sarchi. This variety was developed to enhance cup quality while building resistance to leaf rust. The coffee is processed using the Funky Natural method, which accelerates the initial fermentation phase by placing coffee in thicker piles at higher temperatures before careful monitored drying. The cup profile features funky notes, boozy smells, and fruity aftertaste with heavy body and clean finish.
