This coffee is produced by smallholder growers in Inzá municipality, part of the Tierradentro region on the western side of Cauca, Colombia. The region is 80% inhabited by the indigenous Paeces tribe. Farmers own small parcels of land averaging 0.5 to 1.5 hectares, growing coffee at 1700 meters altitude. The coffee features Caturra and Castillo varieties, processed using the washed method. Roast colour is 126. The flavor profile includes nutmeg spice, dark chocolate-like bitterness, blood orange-like acidity, with overall notes of sticky toffee and caramel. This is a more developed roast designed specifically for espresso, with enhanced intensity and boldness.
