This decaffeinated coffee originates from Rubavu in Rwanda's Western Province at 1500-2000 meters elevation. Produced by the Tuvemubukene Women's Cooperative and processed through the Swiss Water Process (SWP), a chemical-free decaffeination method. The Red Bourbon variety delivers milk chocolate, raisin, and cherry flavor notes with a medium roast and cocoa-forward profile. The Swiss Water decaffeination maintains complex aroma and flavor while removing caffeine.
Founded in 2020 at the onset of the COVID 19 pandemic, Moonwake Coffee Roasters emerged from the passion of two former tech engineers, Ming Wood from Tesla and Mabel Yeung from Meta. What began as Ming's personal coffee project within Tesla's internal coffee club evolved into a full roastery operation after both founders chose to leave their tech careers to pursue coffee full time between 2023 and 2024. Moonwake represents a growing movement of technologists who discovered that coffee roasting offers greater fulfillment than their previous careers, channeling engineering precision into specialty coffee.
