Panama Geisha Washed coffee from the Janson family. The coffee exhibits floral characteristics with a pleasant lavender aroma. It features a complex acidity that begins with tartaric grape notes and transitions to grapefruit upon cooling. Medium sweetness with honey characteristics and a medium-low silky body create a refined cup experience suitable for daily drinking.

Untold Coffee Lab

Seven co founders launched Untold Coffee Lab in Rochester, New York in April 2024, bringing together expertise from across the specialty coffee world. Among them: head roaster Danilo Lodi, a WBC Certified Judge since 2010 and coach of the 2012 and 2023 World Barista Champions; Justin Boudeman, owner of Longboard Specialty Coffee in Panama; and Francesco Bernasconi, formerly of Dalla Corte espresso machines. Untold roasts on Stronghold S7X and S9 machines, sourcing auction microlots and competition grade lots from Panama, Brazil, Colombia, and Guatemala. Roasted coffee is vacuum sealed and frozen at minus 11 degrees Fahrenheit to preserve peak freshness. The operation is built around the belief that the best coffees in the world deserve the most precise handling at every stage.
