Hand-picked ripe cherries are depulped within hours, then cool-temperature fermented, washed, and sun-dried on raised beds for 10-15 days before milling. The washed process emphasizes clarity and structure. Flavor notes include white florals, pomegranate, peach, guava, and purple grape with a smooth, honeyed texture.
