Pastel Hour is a Chiroso variety coffee from Finca Los Tres Mosqueteros in the Antioquia region of Colombia, grown at 2100 meters altitude. This lot undergoes a unique multi-day layered fermentation process where harvests are added to shared tanks before being washed and dried slowly in solar parabolic dryers for 15 to 20 days. This extended processing builds aromatic depth and sweetness while maintaining a clear cup profile. The coffee features distinct tasting notes of mint, verbena, and purple florals.
