About This Coffee

Perla Negra is a natural process single varietal microlot from Francisca Cubillo and Oscar Chacón at Beneficio Las Lajas in Sabanilla de Alejela, Costa Rica, located near Poas Volcano in the West Central Valley. This coffee features the Hybrid 17 cultivar, selected for exceptional sweetness through their hybrid testing program. Only the highest Brix content cherries from the special reserve lot were hand-selected and processed using the distinctive Perla Negra natural process, where coffee cherries are dried intact on patios and raised beds. This historic processing method originated in 2009 following an earthquake and produces a characteristic black dried cherry. Only 8 bags of this micro-microlot were produced exclusively for Torque Coffees. Las Lajas is certified organic and represents three generations of coffee farming since 1840.

Torque Coffee

Nanelle and Andy Newbom founded Torque Coffee in San Diego in 2022, bringing roughly 25 years of combined experience in roasting, green coffee sales, and specialty coffee organizations, including co founding the Barista Guild of America. Nanelle handles 100 percent of the roasting on a Diedrich IR5, and no coffee leaves the roastery more than 48 hours after it was roasted. Torque operates a Proportional Pricing model in which producers receive a fixed percentage of the retail price: 20 percent on single bag purchases and 35 percent on wholesale. All paper products are recycled, FSC certified, and home compostable, wholesale deliveries use reusable canisters, and shipping mailers are made from limestone quarry waste. The roastery has earned multiple Golden Bean Awards.
