Persephone - Washed Ethiopia Layo

Co founded in 2018 by former baristas Eric Hervey, Katjriana Marker, and Courtney Gifford, Mythical Coffee officially opened in December 2019 after the founding team invested their personal savings and self built much of their café space. Based in Gilbert, Arizona with a second location in Scottsdale, Mythical roasts green beans sourced from around the world with a commitment to responsible and ethical sourcing practices. The roastery uses shared time on roasting equipment at partner facility Xanadu Coffee while conducting all roasting in house, with Eric Hervey overseeing bean selection and roasting. Mythical distinguishes itself through creative naming drawn from world mythologies, with signature coffees including Aphrodite and Helen of Troy from Ethiopia and Wings of Icarus from Kenya.
