About This Coffee

A Bourbon variety coffee from Finca Cedruyoc in the Calca subregion (Yanatile) of Cusco, Peru, grown at 1,850 metres above sea level. Produced by Juan José Huillca on a 2.5-hectare steep, rocky farm. Undergoes a distinctive double fermentation — 48 hours in cherry followed by 36 hours post-pulping — then processed using the fully washed method and dried on covered raised beds for approximately 18 days. Light espresso roast with vibrant notes of papaya, red apple, and tropical fruits, highlighting natural sweetness and juicy acidity.

Fjord Coffee

Kresten Thøgersen, Morgan Love, and James Maguire founded Fjord Coffee in 2016, born from a collaboration between the Father Carpenter and Silo cafe teams who pooled resources to build a shared roasting operation. The roastery is located in East Berlin, where the team works on a cast iron Probat roaster using a unique combination of conduction and convection methods. Their Nordic style roasting philosophy draws out naturally sweet and vibrant flavors while showcasing the diversity of regions and processing methods from origins including Brazil, El Salvador, Colombia, Kenya, Guatemala, and Ethiopia. Direct trade relationships with farmers go beyond simple sourcing, often extending to the creation of experimental lots developed in partnership. In 2023, Fjord and Father Carpenter formally separated, with each pursuing its own roasting identity while retaining the collaborative spirit that brought them together.
