This single origin coffee is from the San Ignacio Province in Cajamarca, Peru, grown at altitudes between 1350-1890 meters. The coffee is produced by COOPAFSI, a cooperative formed in 1968 with a presence in the districts of La Coipa, Huarango, Tabaconas, and San Ignacio. The varieties include Bourbon, Catimor, and Mundo Novo. It uses Yellow Honey processing, where beans are fermented for 8 hours in wooden tanks made from fallen Romerillo trees, then dried in covered mesh tunnels for 15-18 days. The farms are located in buffer zones of protected natural areas with organic certification. Flavor notes include orange marmalade and honeycomb.
Adams & Russell has been roasting coffee in Birkenhead, near Liverpool, since 1978. They use small batch flame roasting methods, hand roasting specialty grade Arabica from origins spanning nearly every coffee growing country. Their Peninsula Blend earned two Gold Stars at the Great Taste Awards. The company is both a registered Fairtrade Foundation Operator and a roaster of Rainforest Alliance certified coffees. In 2016 they opened a Coffee School with a dedicated espresso room for SCA certified barista training. They also supply wholesale clients with equipment from La Marzocco and Mahlkönig alongside their beans.
