This coffee is from Villa Lucia farm in Santa Barbara, Colombia, produced by Andres Cardona at 1650 meters altitude. The farm spans 12 hectares with harvest from October to December. It features Castillo and Colombia varieties processed using a unique Purple Honey method involving a 96-hour fermentation with sugar cane honey introduction, followed by controlled drying. The coffee offers bold wine grape and berry flavors with fireweed honey, pepper, and dark chocolate notes.
Cathedral Coffee was founded in 2013 in Portland, Oregon by Austen Tanner, Nate Dillon, and Matthieu Galizia. The team brought roasting in house in early 2022, starting with a 3 kilo Mill City Roasters machine before doubling capacity with a 6 kilo Giesen at their Saint Helens roastery midway between Portland and Scappoose. All coffee is roasted fresh on Tuesdays and Wednesdays and shipped weekly on Thursdays, with an ever rotating single origin lineup sourced ethically and transparently. The business now runs three café locations across North Portland, Scappoose, and Lake Oswego, and has been featured in Portland Monthly's guide to the city's best independent coffee shops.
