This coffee is sourced from over 350 smallholder farmers around Idido village in Yirgacheffe, Ethiopia, at 2200 meters altitude. The variety is Ethiopian Landrace and it is washed processed. Ripe cherries are delivered to the Gizat washing station where they are sorted for ripeness, fermented for 36 to 72 hours, washed, and floated to remove defects. The beans are then dried on raised African beds for 8 to 15 days to reach 11.5–12% moisture content. The flavor profile features nectarine, lemonade, and brown sugar notes with bright acidity and clean sweetness.
