About This Coffee

This coffee comes from Finca Monteblanco in Colombia, grown at 1730 meters altitude near the protected area Cueva de los Guacharos and the Suaza river. Produced by Rodrigo Sanchez Valencia, a third-generation farmer. The lot undergoes a unique co-fermentation: 10 yeast strains are pre-fermented for 8 days with shredded coconut pulp and cholupa fruit (used as a lemon substitute in lemonades), after which the coffee is added and fermented for an additional 180 hours (7.5 days) via anaerobic natural process. The result is a fruit-forward, aromatic bean with prominent coconut and citrus flavors, scoring 88 points SCAA. Roast style: Omni.
