About This Coffee

A limited-edition natural processed coffee from Ratnagiri Estate, shaped by a 60-hour fermentation with a custom culture, then slow-dried for 13 days in a climate-controlled dark room maintained at 10% humidity and temperatures between 2°C and 30°C. Light roasted with an extended Maillard phase to build sweetness. The cup is sparkling wine-like with a silky body and bright mouthfeel, opening with strawberry and prune aromas followed by notes of passion fruit, mosambi, pineapple, and black tea. Best brewed as a Pour Over or AeroPress.
