About This Coffee

A light roast from Riverdale Estate, featuring only the ripest cherries hand-picked from higher-altitude blocks where fruit matures slowly for enhanced sweetness. The cherries underwent a triple wash with natural spring water, a floating process to remove underdeveloped beans, and fermentation with rose petals for added complexity. After fermentation, cherries were slow-dried on raised beds for up to 30 days and hulled at the estate's dry mill. The cup offers bright notes of blood orange, passion fruit, and pomegranate, with a creamy mouthfeel and lingering sweetness.

Blue Tokai roasts twice a week, Monday through Friday, focusing exclusively on 100 percent Arabica specialty coffee sourced directly from Indian estates. The company's trajectory from a bedroom roastery to a business with over 2,500 employees and significant venture funding reflects the scale of India's specialty coffee awakening. Blue Tokai has become the country's most visible specialty roaster, proving that Indian grown coffee can anchor a brand of national and now international reach.
