A single origin coffee from Finca El Eden in Samaria, Palestina, Huila, Colombia, grown at 1500 meters altitude by third-generation producer Rodrigo Sánchez Valencia. The lot features Bourbon and Purple Caturra varieties processed using a unique co-fermentation method. Coffee cherries are combined with a mixture of 10 different yeasts, dehydrated aromatic herbs (chamomile, mint, rosemary), and molasses, sealed for 190 hours, then fermented together for an additional 150 hours before being washed and dried on parabolic beds. The cup profile is pleasantly herbal and balanced, with aromatics and flavors reminiscent of green tea, featuring notes of lemon verbena, white peach, and floral honey.
