The cherries underwent an anaerobic natural fermentation in a bio-reactor for 36 hours with yeast inoculation, followed by 26 days of careful drying with controlled temperature and humidity. The result is a fruit-forward, complex cup with tasting notes of Pineapple, Citrus Fruits, and Cocoa.
