About This Coffee

A Gesha variety coffee from Finca Santa Barbara in Huila, Colombia, grown at 2000 masl by producer Jhon Samboni. The coffee undergoes a unique two-stage fermentation: an initial 100-hour fermentation in blue tanks, followed by pulping and a second 30-hour fermentation in airtight tanks, then dried on marquesinas for 10–15 days. Features floral aromas of rose and jasmine, fruity notes of grapefruit and mandarin, a silky medium body, balanced orange-like acidity, and a caramel aftertaste. Crop 2025.

Monogram Roasters is the specialty coffee expression of the Manolikakis family, whose coffee roots in Chania stretch back five generations to 1886, when Konstantinos Manolikakis began importing Brazilian coffee, Cuban sugar, and Ceylon tea, eventually becoming the exclusive supplier to all of Crete. Today the family operates a modern roasting and processing facility in Souda while running two Monogram cafes in Chania's center and old town, plus an evening sibling venue called The Bar by Monogram. Their approach to specialty roasting is distinctly data driven, using advanced equipment and extensive cupping evaluation to target a consistent balance between acidity and sweetness in every batch. The sourcing program spans origins from Ethiopia and Kenya to Panama, Colombia, Costa Rica, Guatemala, Brazil, and Tanzania, while a traditional Manolikakis branded Greek coffee roasted for ibrik preparation honors the family's heritage alongside the modern lineup. Monogram bridges 140 years of Cretan coffee tradition with contemporary specialty standards, proving that deep local roots and forward looking craft can thrive in the same cup.
