This coffee is produced by Petrônio Otávio Borges de Sousa at Fazenda Santa Rosa in Cambuquira, Minas Gerais, in the Sul de Minas region of Brazil. The farm spans 636 hectares with 290 hectares dedicated to coffee production. This lot features the Yellow Bourbon variety, which was discovered in 1930 in Pederneiras, São Paulo, and is believed to be either a natural mutation of Red Bourbon or a cross between Red Bourbon and Yellow Botocatu. The coffee underwent Natural processing, where the cherries are dried in the whole fruit before being hulled. Yellow Bourbon is known for good cup quality and relatively high productivity.
Quarter Horse Coffee opened its first café in Oxford in 2012 before moving permanently to Birmingham in 2015, becoming the city's first specialty coffee roasters. The roastery sits in the Jewellery Quarter on Kenyon Street, where the entire roasting process is visible from the café floor. In 2023 they opened a dedicated site for production and training. Coffees are organised into three categories: Stable for balanced profiles, Venture for floral and citrus forward lots, and Unique for experimental processes. All retail bags are fully home compostable and biodegradable.
