About This Coffee

This coffee is produced by small-scale farmers from the San Ignacio, Jaen, and Cutervo provinces in the Cajamarca Department of Peru. Grown at elevations between 1,500 and 1,800 meters, the coffee features Catuai, Caturra, Catimor, Bourbon, and Pache varieties. The washed process involves harvesting cherries at optimal ripeness, floating and hand-sorting to remove defects, de-pulping, 30-40 hours of fermentation, gentle washing, and temperature-controlled drying for 16-20 days. The light roast develops sweetness with balanced acidity and caramelization, offering flavor notes of caramelized nuts, brown sugar, chocolate, apple, and citrus.
