Single-origin coffee from Sisola Mill, a quality-focused mill in the Toraja region of Sulawesi, Indonesia. The coffee is processed using anaerobic red honey fermentation, where whole cherries are soaked in a sealed, oxygen-free container before pulping and drying with mucilage intact. Varietals include Typica, Jember, and S-795. Flavor profile features lime acidity balanced by heavy body and cane sugar sweetness, with herbal notes predominating the aroma ranging from tea to pear. Subtle and complex fruit and fermentation flavors with exceptional mouthfeel.
