This is a decaffeinated coffee from 24 producer groups in Chiapas, Mexico. The coffee grows at 1200-1800 meters altitude on small farms in the microclimate around El Triunfo Biosphere Reserve. The caffeine is removed using the Mountain Water method, performed locally in Mexico. The coffee is wet processed and features varieties including Typica, Mondo Novo, Bourbon, and Caturra. The flavor profile includes creamy, butterscotch, and dried fruit notes.
