This decaffeinated coffee comes from small family farms in the Nariño region of Colombia, specifically around the Galeras volcano. The coffee is sourced through Cooperativa de Cafés Especiales de Nariño, which works with over 300 smallholder farmers. The coffee is grown at altitudes of 1550-1650 meters. Varieties include Caturra, Castillo, and Colombia. The coffee scores 84-85 points on the specialty coffee quality scale. It is decaffeinated using the ethyl acetate (EA) method, a natural process derived from fermented sugarcane that removes 97% of caffeine while preserving the coffee's flavor profile. The coffee is washed and sun-dried.
