About This Coffee

A micro-lot Caturra variety coffee from Finca Concepción Buena Vista, located in San Martín Jilotepeque, Chimaltenango, Guatemala. From the El Burro lot, this coffee is processed using the Black Honey method — retaining high mucilage content and dried slowly on African raised beds and in a greenhouse. The result is a sweet, complex, full-bodied cup with tasting notes of plum, peach, and vanilla. Roast level: Medium.

12 Onzas is a specialty coffee roastery based in Guatemala City, founded by David Solano, his wife Atenea Kaire, and his brother Eddie. The company represents the fourth generation of the Solano family's coffee farming legacy, operating from their ancestral farm Concepcion Buena Vista in Chimaltenango, which has been in production for over a century. David Solano, a three time Guatemalan Barista Champion, envisioned 12 Onzas as a platform to bring premium Guatemalan coffees to local consumers who traditionally had access only to mass produced alternatives. Their philosophy emphasizes experimental processing methods and direct sourcing from their family farm, and through their work 12 Onzas has become instrumental in establishing Guatemala's vibrant specialty coffee scene.
