About This Coffee

This coffee is from the San Agustín region in Huila province, Colombia, grown at 1,750 meters altitude by a cooperative of small farmers. The varieties are Caturra and Colombia. It undergoes a co-fermented honey process with a 5-day anaerobic fermentation together with mucilage, yeasts, and strawberries. The process includes 24-hour pre-fermentation in plastic bags, followed by 24-hour fermentation in whole cherries, then depulping and 5 days of anaerobic co-fermentation, 10 days of mechanical drying, and 5 days of stabilization in GrainPro bags. The flavor profile features strawberries, red fruit, cream, and citrus notes. Cupping score is 88.00 points.
