This coffee is a Bourbon N39 variety from the Edelweiss Estate in Tanzania. The lot underwent an extended, high-temperature fermentation for six days in a controlled, exothermic environment to develop complex, fruit-forward esters. Following fermentation, the cherries were pulped with a measured amount of mucilage left intact. The resulting cup is velvety and smooth, featuring stone fruit sweetness and a slight nuttiness.
